so like i promised, here is more on the meals that I have been making on Sunday's to make my life easier during the work week.
so two of the meals are ones that i got from Ryan's grandma.
she's a comfort food kinda gal. and we like that around here. :) plus these are meals that ryan grew up on and he L-O-V-E loves them. saddly i have no pictures - sorry. but here are the recipes, from the church cookbook (church cookbooks are how we roll in this house and you should consider it).
the first is Pizza Casserole. i've had rave reviews from adults and 3 year olds alike. the 3 year old exclaimed, "this is the best pizza i ever ate."
so ingredients:
12 oz bag egg noodles - i use no yolks, because my mom did...
2 lbs hamburger
1/2 c. onion
3 cloves garlic finley chopped
2 cans cream of mushroom soup
2 cans tomato sauce
2 palmfuls italian seasoning
8 oz. mozzarella cheese
pepperoni
(+ whatever pizza toppings you like, sometimes i do green peppers, mushrooms, italian sausage, etc)
Boil water. When boiling add noodles - cook until VERY al dente. Like 5 minutes. Drain. Meanwhile, brown hamburger, add onion and garlic half way through. Drain. Add soups (and any other toppings - except pepperioni) to meat. Add it meat mixture to noodles with half the cheese, stir. Pour into casserole dish(es). One large 9x13 or two square pans. Top with remaining cheese and then top with pepperonis. Bake @ 350 til heated through, 30 - 40 minutes.
(To freeze skip the baking step. Cover with aluminum foil and freeze in pan. OR you can pour the noodle, meat, cheese mixture into a gallon freezer bag and lay flat to freeze. Then thaw and top with remaining ingredients later, bake as before.)
It'll look something like this:
the second is ham and potato casserole. this one is basically cheesey potatoes and add ham. :)
ingredients:
1 lb. cooked ham, diced (i like to use left over christmas/easter/whatever holiday you made ham for, ham - better flavor and i didn't have to cook more ham)
32 oz frozen southern style hashbrowns (the little cube ones)
1 pt. sour cream
1 can cream of something (chicken, mushroom)
2 c. shredded cheddar cheese
1 tbsp onion powder
1 tbsp garlic powder
salt and pepper to taste
sometimes i feel like this needs a little something else, i just can't figure out what...tweak it and message me!
Mix it all together and put in a large casserole dish or two square ones. Bake at 325 for 60 minutes.
(To freeze, top with foil. Store. Or divide into two, one gallon freezer bags, lay flat, freeze.)
